AMIEs FENNEL, ORANGE & HAZELNUT salad
- 3 oranges
- 2 medium fennel bulbs, trimmed
- 1/4 cup hazelnuts, lightly toasted and coarsely chopped
- 2 tbsps. extra-virgin olive oil
- 1 freshly ground black pepper
- 1 tsp salt
- Peel the oranges and cut off the pith.
- Slice oranges into thin rounds, removing any pips.
- Thinly slice the fennel and place in a medium bowl.
- Add the orange slices and hazelnuts.
- Drizzle with oil, whisk salt and toss to coat.
- Season with freshly ground black pepper.
- Serves 4.
