Chicken Ala Maria Recipe
- 3/4 c. fine dry Italian seasoned bread crumbs
- 2 tbsp. grated Parmesan cheese
- 6 whole large chicken breasts, skinned, boned and halved lengthwise
- 1/2 c. sliced green onion
- 2 tbsp. butter
- 2 tbsp. flour
- 1 c. lowfat milk
- 1 (10 ounce.) pkg. frzn minced spinach, thawed and well liquid removed
- 3/4 c. diced fully cooked ham
- Combine bread crumbs and cheese, reserve half for topping.
- Rinse chicken, pat dry.
- Dip chicken in crumb mix to coat lightly.
- Place in a 9 x 13 baking dish.
- In a small saucepan cook onion in butter till tender.
- Stir in flour till blended.
- Add in lowfat milk.
- Cook and stir over medium heat till thickened and bubbly.
- Stir in spinach and ham.
- Spoon spinach mix over chicken, sprinkle with remaining crumb mix.
- Bake, uncovered at 350 degrees for 40 to 45 min or possibly till chicken is no longer pink.
