Bayou Salad Recipe
- 1 lb Crawfish, cooked and peeled
- 2 c. Cooked rice
- 1 c. Celery, sliced
- 1/2 c. Cherry tomatoes, quartered
- 1/3 c. Ripe olives, sliced
- 1/3 c. Green pepper, diced
- 1/2 c. Fat-free Italian salad dressing Lettuce leaves
- Combine all ingredients except lettuce in large bowl.
- Serve on lettuce leaves.
- Yield: Serves 6
