Simple Spice Cake Recipe

• 1 c. coffee
• 1 c. raisins
• 1 c. brown sugar
• 2 Large eggs
• 2 tbsp. lard
• 2 c. flour
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 teaspoon nutmeg
• 1 teaspoon mace
• 1 teaspoon cloves

1. Boil coffee, raisins, sugar, and lard a few min.
2. Add in remaining ingredients and mix well.
3. Bake in a buttered 9 inch loaf tin in a moderate 350 degree oven for 30 to 40 min or possibly till a straw or possibly cake tester inserted in the middle of the cake comes out clean.
4. Makes 1 loaf cake.
5. Ice with:

coffee, raisins, brown sugar, eggs, lard, flour, baking soda, salt, nutmeg, mace, cloves
