Pork Shashlik with Spicy Red Wine Marinade

  1. In a large bowl, combine the garlic, tomatoes, onion, wine, chopped cilantro, crushed red pepper, oregano and paprika.
  2. Add the pork and toss to coat thoroughly.
  3. Cover and refrigerate overnight.
  4. Light a grill.
  5. Thread the pork onto 8 metal skewers, leaving a small space between each piece.
  6. Brush the pork with oil and season with salt and pepper.
  7. Grill over moderate heat, turning occasionally, until nicely browned and cooked through, about 30 minutes.
  8. Serve with cilantro sprigs and grilled flatbread.
