Curried Beef and Potato Pots

  1. Heat oil in a large saucepan over medium heat.
  2. Add brown onion.
  3. Cook, stirring, for 5 to 7 minutes or until tender.
  4. Add curry powder.
  5. Cook for 1 minute or until fragrant.
  6. Add mince.
  7. Cook, stirring with a wooden spoon to break up mince, for 5 minutes or until browned.
  8. Add tomatoes and 3/4 cup cold water.
  9. Simmer for 15 to 20 minutes or until thickened.
  10. Season with salt and pepper.
  11. Meanwhile, place potatoes in a large saucepan.
  12. Cover with cold water.
  13. Bring to the boil over high heat.
  14. Reduce heat to medium-high.
  15. Boil, uncovered, for 15 minutes or until tender.
  16. Drain.
  17. Remove to a bowl.
  18. Mash potatoes.
  19. Add sour cream and green onions.
  20. Season with salt and pepper.
  21. Stir to combine.
  22. Spoon beef mixture evenly into four 1 1/4 cup-capacity ramekins.
  23. Top with potato mixture.
  24. Serve.
