Curried Beef and Potato Pots
- 1 tablespoon olive oil
- 1 brown onion, thinly sliced
- 2 tablespoons mild curry powder
- 500 g beef mince
- 400 g diced tomatoes
- 500 g desiree potatoes, peeled, chopped
- 100 g sour cream
- 2 green onions, thinly sliced
- Heat oil in a large saucepan over medium heat.
- Add brown onion.
- Cook, stirring, for 5 to 7 minutes or until tender.
- Add curry powder.
- Cook for 1 minute or until fragrant.
- Add mince.
- Cook, stirring with a wooden spoon to break up mince, for 5 minutes or until browned.
- Add tomatoes and 3/4 cup cold water.
- Simmer for 15 to 20 minutes or until thickened.
- Season with salt and pepper.
- Meanwhile, place potatoes in a large saucepan.
- Cover with cold water.
- Bring to the boil over high heat.
- Reduce heat to medium-high.
- Boil, uncovered, for 15 minutes or until tender.
- Drain.
- Remove to a bowl.
- Mash potatoes.
- Add sour cream and green onions.
- Season with salt and pepper.
- Stir to combine.
- Spoon beef mixture evenly into four 1 1/4 cup-capacity ramekins.
- Top with potato mixture.
- Serve.
