MsKipper's Individual Pot Pies (chicken)
- 1 can biscuits (can make your own). I use the flaky biscuits from walmart.
- 1 can Progressive Loaded Potato Soup
- 1 can cream of chicken soup (low sodium)
- 3 tbsp butter
- 2 stalks of celery (chopped)
- 1 medium onion (minced)
- 1 small bell pepper (chopped)
- 1 cup milk
- 2 large chicken breast cooked (look at recipe for flavorful chicken broth on my profile)
- 1 cup frozen peas and carrots
- * if you wish you can use 2 cans of chicken instead.
- saute celery, onion, and bell pepper in butter.. celery should be semi cooked
- add 2 cans of the soup and the milk.
- when soup looks like gravy add diced chicken and peas and carrots
- spread out biscuits and put in the bottom of ramekins.
- fill with soup/ chicken mix.
- use a spread out biscuit for the top.
- use milk to brush on top of each biscuit.
- cook until biscuit is brown.
- * can cut recipe in half.. if so get small can of biscuits... can of 6.
- * I bought a bundle of 24 ramekins off eBay for 12.00. they hard cardboard lids.
- * can use beef... if so change soup to cream of mushroom.
