Shrimp Po'boy

  1. In small bowl, stir together mayonnaise and Cajun seasoning until blended.
  2. Cut each roll horizontally almost in half, leaving attached at 1 end.
  3. Scoop out about 1/2 inch soft bread from center of bottom halves.
  4. Place rolls on serving plate.
  5. Spread mayo mixture on cut sides of top halves.
  6. Arrange lettuce, tomatoes, shrimp, and pickles, if using, on bottom halves.
