Venison Chili
- 5 c. canned tomatoes
- 1 1/2 lb. onions, chopped
- 1 lb. green pepper, chopped
- 2 cloves garlic, crushed
- 1/2 c. parsley, chopped
- 1/2 c. butter
- 1 lb. ground lean pork
- 2 1/2 lb. deer meat, ground for chili
- 1/2 c. chili powder or to taste
- 2 (15 oz.) cans red beans with juice
- 2 Tbsp. salt
- 1 1/2 tsp. cumin seed
- 1 1/2 tsp. pepper
- 1 1/2 Tbsp. oil
- Simmer tomatoes 5 minutes in their own juices.
- Add onions, green peppers and cook until tender, stirring often.
- Add garlic and parsley.
- Melt butter in a large skillet and saute meat for 15 minutes.
- Add meat to tomato mixture; stir in chili powder and cook 10 minutes.
- Add beans and spices and water, if needed. Simmer covered 1 hour.
- Cook uncovered for 30 minutes.
- Serves 8 to 10.
