Tender & Juicy Yu Lin Chi (Chinese Deep-fried Chicken)

  1. Spread out the chicken breast; slit open the center to even out the thickness.
  2. Poke holes into the skin side with a fork.
  3. Marinate in the ingredients for 20 minutes.
  4. Coat Step 1 in flour and shake off the excess.
  5. Put the oil in the frying pan and place the chicken in the pan without heating it first.
  6. Then turn the heat to medium.
  7. Slowly and patiently deep-fry the chicken.
  8. Once it has turned golden brown, flip over and fry for another 7-8 minutes.
  9. Lastly, turn the heat to high and once the sound of the oil changes, remove the chicken.
  10. Put the ingredients into a heat-resistant dish and microwave for 1 minute.
  11. It's very hot so let it cool a bit before slicing.
  12. Arrange shredded lettuce on a plate and place the fried chicken on top.
  13. Top with onion sauce.
