Tortitas de Ejotes (String Beans)

  1. In a mediumsize bowl, mix the 1 tablespoon of olive oil, vinegar and mustard.
  2. In another bowl combine the egg, flour, salt and pepper.
  3. Add the vinaigrette.
  4. While beating, add the milk, a little at a time.
  5. Add the string beans.
  6. Heat the oil in a mediumsize skillet, over a medium heat.
  7. Place the tortitas de ejotes, in patties 2 inches in diameter, in the skillet.
  8. Cook them until golden brown on both sides.
  9. Serve at once.
