Tangy Marinated Shrimp with Parsley or Chives
- 4 tablespoons olive oil
- 2 tablespoons white vinegar
- 1 teaspoon House seasoning, recipe follows
- 2/3 cup mayonnaise
- 2 tablespoons anchovy paste
- 2 tablespoons Creole or brown mustard
- 1 pound large cooked shrimp, peeled and tails left on
- 1 red bell pepper, sliced into thin strips
- 4 green onions, chopped
- 2 tablespoons chopped fresh parsley or chives
- 1 lemon, juiced
- 1 cup salt
- 1/4 cup black pepper
- 1/4 cup garlic powder
- Using a large bowl, beat the oil, vinegar, and house seasonings together.
- Add the mayonnaise, anchovy paste, and mustard, and stir until well blended.
- Fold in the shrimp, bell pepper, onion, parsley, and lemon juice.
- Place in refrigerator and marinate overnight.
- Serve cold or at room temperature.
- Mix ingredients together and store in an airtight container for up to 6 months
