Swiss Steak

  1. Chop onion and parsley.
  2. Cut pepper into 1/8-inch slices.
  3. In large skillet, heat oil over medium high heat until hot.
  4. Place beef steaks in skillet and brown on both sides.
  5. Pour off drippings, if needed.
  6. Season steak with salt, thyme leaves and pepper.
  7. Top with onion and jalapeno pepper.
  8. Cover and continue cooking 30 minutes or until tender.
  9. Remove steak, cut into serving pieces and return to sauce.
  10. Serve over prepared rice, pasta or mashed potatoes.
  11. Garnish with parsley.
