Swiss Steak
- 1 3/4 lb. round steak, cut 3/4-inch thick
- 1 Tbsp. vegetable oil
- 1/4 tsp. pepper
- 1/4 c. water
- 4 medium tomatoes
- 1 or 2 medium jalapeno pepper or small bell pepper
- 3/4 tsp. salt
- 1/2 tsp. dried thyme
- 1 large onion
- 1 Tbsp. fresh parsley
- Chop onion and parsley.
- Cut pepper into 1/8-inch slices.
- In large skillet, heat oil over medium high heat until hot.
- Place beef steaks in skillet and brown on both sides.
- Pour off drippings, if needed.
- Season steak with salt, thyme leaves and pepper.
- Top with onion and jalapeno pepper.
- Cover and continue cooking 30 minutes or until tender.
- Remove steak, cut into serving pieces and return to sauce.
- Serve over prepared rice, pasta or mashed potatoes.
- Garnish with parsley.
