Dijon Vinaigrette
- 2 tablespoons sherry vinegar
- 1 1/2 teaspoons Dijon mustard
- 1 1/2 teaspoons whole grain mustard
- 1 small garlic clove, crushed
- 1/2 teaspoon finely chopped fresh thyme leaves
- 6 tablespoons extra virgin olive oil
- Salt and freshly ground black pepper
- In a small bowl, whisk together the vinegar, mustards, garlic, and thyme.
- In a thin, steady stream, whisk in the oil until the dressing thickens.
- Season with salt and pepper.
- Will keep, tightly covered, in the refrigerator for up to 5 days.
