Stir-fried pork recipe
- 1 handful Purple sprouting broccoli, cut into florets
- 55 g (1.9oz) Hard goats' cheese, grated
- 0.5 Lemon, zest only
- 0.5 tsp Dried chilli flakes
- 1 pinch Salt
- 1 pinch Freshly ground black pepper
- 200 g (7.1oz) Pork tenderloin, sliced
- 1 tbsp Olive oil
- 0.5 Onion, finely sliced
- 2 Garlic cloves, finely chopped
- 2 tbsp Soy sauce
- 1 tbsp Honey
- 1 Lime, zest and juice
- For the soy and honey pork: Heat the olive oil in a frying pan and cook the onion for 2-3 minutes, or until softened.
- Add the garlic and fry for one minute, then add pork and stir-fry until golden brown all over.
- For the soy and honey pork: Drizzle over the soy sauce, honey, lime zest and juice plus a splash of boiling water and cook for 1-2 minutes or until the pork is cooked through.
- Set aside.
- For the broccoli: Place the broccoli into a pan of boiling salted water and cook for 3-4 minutes or until tender.
- Drain well and stir into the pan with the pork, then add the grated goats' cheese, lemon zest and chilli flakes.
- Season to taste with salt and freshly ground black pepper.
- Pile the stir-fried pork and broccoli on to a serving plate and serve.
