Gombo File Aux Crevettes - Shrimp Gumbo

  1. Heat bacon grease in a large saucepan.
  2. Clean and chop green onions, reserving 1 cup of the green tops.
  3. Saute onions and okra in the grease for ten minutes.
  4. Add tomatoes and cook for another five minutes.
  5. Add stock, peppers, reserved green onion tops, thyme, bay leaf and salt.
  6. Bring to a boil and cook about ten minutes.
  7. Add shrimp.
  8. Cover, reduce heat and cook slowly for an hour.
  9. Just before serving, add file powder moistened with a little broth.
  10. Serve with steamed rice.
