Bacon Mandarin Salad Recipe
- 1/2 c. extra virgin olive oil
- 1/4 c. red wine vinegar
- 1/4 c. sugar
- 1 Tbsp. minced fresh basil
- 1/8 tsp warm sauce
- 2 can mandarin oranges - (15 ounce ea) liquid removed, chilled
- 1 bn Red Leaf lettuce torn
- 1 head romaine lettuce torn
- 1 pkt bacon - (16 ounce) cooked, crumbled
- 1 pkt sliced almonds - (4 ounce) toasted
- Whisk together first 5 ingredients in a large bowl, blending well.
- Add in oranges and lettuces, tossing gently to coat.
- Sprinkle with crumbled bacon and sliced almonds.
- Serve immediately.
- This recipe yields 12 servings.
- Comments: Wash the lettuces the night before.
- Wrap in a damp paper towel, and refrigeratein zip-top plastic bags; cook the bacon, and toast the almonds too.
- Assemble and dress right before serving.
- Fresh orange segments may be substituted for canned mandarin oranges, if you like.
