Chicken Tenders and Cucumber with Mayonnaise
- 2 Chicken tender cutlets steamed in sake (See Steps 1 and 2)
- 1 Cucumber
- 1 1/2 tbsp Mayonnaise
- 1 1/2 tbsp Ponzu
- 1 pinch Salt
- 1 dash Pepper
- Making the sake-steamed chicken cutlets in the microwave: Sprinkle 4 chicken cutlets all over with 1 tablespoon sake, place into a microwave safe container, and lightly cover with plastic wrap.
- Microwave at 500W for 3 minutes, let sit for 3 minutes with the wrap still on, and they are ready.
- You can easily tear the chicken up by hand once it has cooled.
- If you do so, remove the hard bits of sinew.
- Now for the chicken cutlet and cucumber with mayonnaise recipe.
- We will be using two of the sake-steamed chicken cutlets.
- Finely break up 2 of the chicken cutlets, and let cool.
- Cut the cucumber diagonally into 5 mm thick slices, then finely chop.
- Combine with the well-mixed "A" ingredients, and it is done.
- This is also tasty with a 1/2 teaspoon of grainy mustard mixed in.
