Sauteed Shisito Peppers

  1. Heat oil in a cast iron pan over high heat.
  2. Add peppers to the pan in a single layer, with room in between the peppers.
  3. Saute for approximately 1-2 minutes or until skin starts to blister.
  4. Turn peppers and saute the other side.
  5. Place the cooked batches on paper towels and continue cooking until all of the peppers are sauteed.
  6. Add a splash of lemon at this point if you plan to and sprinkle with salt.
