Sauteed Shisito Peppers
- 2 Tablespoons Sunflower Oil (or Your Favorite High Smoking Point Oil)
- 1 pound Shisito Peppers
- Sea Salt
- Lemon Wedges, For Squeezing Over Top (optional)
- Heat oil in a cast iron pan over high heat.
- Add peppers to the pan in a single layer, with room in between the peppers.
- Saute for approximately 1-2 minutes or until skin starts to blister.
- Turn peppers and saute the other side.
- Place the cooked batches on paper towels and continue cooking until all of the peppers are sauteed.
- Add a splash of lemon at this point if you plan to and sprinkle with salt.
