Special Green Beans
- 2 1/2 lb. fresh green beans
- 3 c. water
- 1 c. sliced fresh mushrooms
- 1/3 c. chopped onions
- 3 cloves garlic, crushed
- 1 (8 oz.) can sliced water chestnuts, drained
- 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1/2 tsp. dried whole basil
- 1 tsp. dried whole Italian seasoning
- 1/3 c. olive oil
- 1/4 c. grated Parmesan cheese
- Wash beans, trim ends and remove strings.
- Combine beans and water in Dutch oven.
- Bring to boil, cover, reduce heat and simmer 6 to 8 minutes or until crisp to tender.
- Drain.
- Plunge beans in ice water to stop cooking process.
- Drain and set aside.
- Saute mushrooms and next 7 ingredients in oil in Dutch oven.
- Stir in beans and cook until thoroughly heated.
- Sprinkle with Parmesan cheese.
- Yields 8 to 10 servings.
