Saturday-Morning Pancakes
- 2 eggs
- 2/3 cup fat-free milk
- 1 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
- zest and juice from 1 lemon
- 3/4 cup flour
- 2 Tbsp. sugar
- 1 Tbsp. CALUMET Baking Powder
- Heat nonstick griddle on medium-high heat.
- Meanwhile, whisk eggs, milk, cottage cheese, zest and juice in large bowl until well blended.
- Mix next 3 ingredients.
- Add to egg mixture; whisk until well blended.
- Spray hot griddle with nonstick cooking spray.
- Ladle batter onto griddle, using 1/4 cup batter for each pancake.
- Cook 3 min.
- or until bubbles form on tops, then turn to brown other sides.
