Chocolate Mounds Cake
- 2 c. sifted cake flour
- 1 1/2 c. sugar
- 2/3 c. unsweetened cocoa
- 2 tsp. baking powder
- 1 c. corn oil
- 4 eggs, separated
- 3/4 c. water
- 1 1/4 tsp. vanilla
- 2 tsp. almond extract
- 1/4 tsp. cream of tartar
- Sift together the flour, sugar, cocoa and baking powder into a large bowl.
- Add oil, egg yolks, water and flavoring; beat until smooth.
- Add cream of tartar to egg whites; beat until peaks form. Fold into main batter.
- Pour into three 8-inch well-greased and floured layer pans.
- Bake in preheated 350u0b0 oven for about 30 minutes, or until layers test done.
- Remove from pan; cool on rack.
- Spread Honey Coconut Filling between layers and top cake with Chocolate Frosting.
