Apple Skillet Cake
- 3 tablespoons butter
- 1 13 cups brown sugar, divided
- 3 cups apples
- 13 cup raisins
- 1 12 cups sifted all-purpose flour
- 2 teaspoons double-acting baking powder
- 14 cup sugar
- 13 cup shortening
- 2 eggs, separated
- 1 teaspoon vanilla
- 23 cup milk
- whipped cream
- Bake at 350 for 35-45 minutes.
- Makes 10-inch round cake.
- Melt - 3 tbs butter in heavy skillet measuring 10 inches across top.
- Remove from heat and add 2/3 cup firmly packed brown sugar.
- Arrange - 3 cups pared, thinly sliced apples (3 medium) in skillet.
- Add 1/3 cup raisins.
- Sift together 1 1/2 cups sifted all purpose flour, 2 teaspoon double act baking powder, and 1/2 tea salt.
- Set aside.
- Add - 1/4 c sugar and 2/3 cup firmly packed brown sugar gradually to 1/3 cup shortening - creaming well.
- Blend in - 2 unbeaten egg yolks and 1 tea.
- vanilla - beat well.
- Add - 2/3 cup milk alternately with the dry ingredients to creamed mixture.
- Blend well after each addition.
- Beat - 2 egg whites until stiff but not dry.
- Fold into batter.
- Pour - over apples.
- Bake - at 350 for 35 to 45 minute Turn out immediately.
- Serve with whipped cream.
