Breakfast Or Anytime Casserole
- 3 c. cubed French bread
- vegetable cooking spray
- 3/4 c. diced lean cooked ham
- 2 Tbsp. diced sweet red pepper
- 1 c. (4 oz.) shredded Cheddar (sharp is best)
- 1 1/3 c. skim milk
- 3/4 c. egg substitute (or eggs)
- 1/4 tsp. dry mustard
- 1/4 tsp. onion powder
- 1/4 tsp. white pepper
- paprika
- Place bread in 8-inch square baking dish that has been coated with cooking spray. Layer ham, red pepper and cheese over bread; set aside. Combine milk, eggs, mustard, onion powder and pepper. Pour over cheese and bread mixture.
- Cover and refrigerate 8 hours. Remove from refrigerator; let stand 30 minutes. Sprinkle with paprika. Bake, uncovered, at 350u0b0 for 30 minutes.
