Pecan Orange Roughy
- 1 lb. orange roughy fillets
- 2 tsp. lemon juice
- 1 tsp. garlic powder
- 1/2 tsp. black pepper
- 1/4 tsp. white pepper
- 2 Tbsp. Parmesan cheese
- 2 Tbsp. finely chopped pecans
- 2 Tbsp. olive oil
- 1 tsp. paprika
- 1 tsp. onion powder
- 1/2 tsp. salt
- 1 Tbsp. dry bread crumbs
- Pam spray
- Preheat oven to 425u0b0.
- Spray Pam in shallow baking pan.
- Place fish fillets in pan.
- In small bowl, combine olive oil, lemon juice, paprika, garlic and onion powders, black and white pepper and salt; mix well.
- Spoon or brush mixture over the fish.
- To the remaining oil mix, add pecans, Parmesan cheese and bread crumbs; mix well.
- Spoon mixture over fish evenly.
- Bake at 425u0b0 for 10 to 15 minutes or until fish flakes easily with a fork.
