Oatmeal Pecan Muffins

  1. Heat oven to 400F.
  2. Place paper baking cups into 12 muffin pan cups or grease muffin pan cups.
  3. Set aside.
  4. Combine oats, flour, sugar, baking powder and salt in large bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs.
  5. Stir in fat free half & half and egg just until moistened.
  6. Gently stir in pecans.
  7. Spoon batter evenly into prepared muffin cups.
  8. Bake for 19 to 24 minutes or until golden brown.
  9. Cool 5 minutes; remove from pan.
