Greek Style Quinoa Burgers

  1. Bring 3/4 cup water to boil; add quinoa, cover, and reduce heat to low.
  2. Cook until liquid is absorbed, 12-14 minutes.
  3. In processor, pulse carrot, half the scallions, beans, quinoa, crumbs, egg & spices.
  4. Form into patties and cook until browned.
  5. Combine remaining ingredients and serve on pita.
