Anytime Quiche
- 2 pie shells (not deep dish)
- 1 lb. bacon, cooked, drained and chopped
- 1 onion, chopped fine
- 1 pkg. frozen chopped spinach or broccoli, cooked and drained
- salt
- pepper
- 1 c. grated sharp cheese
- 1 c. grated Swiss cheese
- 4 eggs
- 1 c. milk
- 1/2 tsp. salt
- dash of pepper
- 1 tsp. parsley
- Bake pie shells until crisp.
- Divide ingredients between shells.
- Cook onion in bacon drippings until clear and drain. Sprinkle onion in pie shells; sprinkle spinach over onion and season spinach to taste with salt and pepper.
- Sprinkle cheeses and bacon over onion and spinach.
- Beat eggs and milk; add salt, pepper and parsley and pour over other ingredients.
- Bake in preheated 400u0b0 oven for 20 minutes or until center is set.
- May be frozen. Makes 2 quiche.
