Potato Cheesy Bacon Mushroom Overload

  1. Pre cook the potatoes by boiling it.
  2. Do not overcook.
  3. It's done when you are able to stick a fork in without it becoming mushy.
  4. (You dont want mashed potatoes!).
  5. Remove the potatoes from the water but don't overly drain.
  6. It's ok if they're a little wet for the cheese spread later.
  7. Saute garlic and onion in olive oil.
  8. Once it starts to get aromatic, add in the potatoes and mix well.
  9. Add the mushroom, bacon, and cheese spread.
  10. Mix thoroughly.
  11. The cheese spread will mix with the water from the potatoes and thin out.
  12. Add in salt, pepper, garlic powder and sage.
  13. Saute a bit further for 2 minutes or once the cheese has reduced a bit.
  14. In the last minute, add in some parsley.
  15. Serve hot.
  16. Top with more parsley if preferred.
  17. Can be eaten on its own or as a side to burger patties!
