Potato Cheesy Bacon Mushroom Overload
- 250 grams baby potatoes, halved
- 1/4 cup cooked bacon, crisped and shredded
- 115 grams button mushrooms, minced
- 120 grams cheddar cheese spread (like Chiz Whiz)
- 1 medium garlic, minced
- 1 medium onion, minced
- 1/2 tsp sage
- 1 pinch salt
- 1 pinch ground black pepper
- 1 tbsp garlic powder
- 3 tbsp olive oil, extra virgin
- Pre cook the potatoes by boiling it.
- Do not overcook.
- It's done when you are able to stick a fork in without it becoming mushy.
- (You dont want mashed potatoes!).
- Remove the potatoes from the water but don't overly drain.
- It's ok if they're a little wet for the cheese spread later.
- Saute garlic and onion in olive oil.
- Once it starts to get aromatic, add in the potatoes and mix well.
- Add the mushroom, bacon, and cheese spread.
- Mix thoroughly.
- The cheese spread will mix with the water from the potatoes and thin out.
- Add in salt, pepper, garlic powder and sage.
- Saute a bit further for 2 minutes or once the cheese has reduced a bit.
- In the last minute, add in some parsley.
- Serve hot.
- Top with more parsley if preferred.
- Can be eaten on its own or as a side to burger patties!
