Pizza Muffins
- 3 Tbsp. olive oil
- 1/4 c. chopped onion
- 1 clove garlic, minced
- 2 c. all-purpose flour
- 1 c. diced Mozzarella cheese
- 1 tsp. oregano
- 2 3/4 tsp. baking powder
- 1/2 c. diced pepperoni
- 1/2 c. grated Parmesan cheese
- 1 c. tomato juice
- 1 egg, beaten
- 3/4 tsp. salt (optional)
- In oil saute onion and garlic until soft.
- In a bowl, mix sauteed mixture with egg and tomato juice.
- In another bowl, combine flour, baking powder, salt, oregano, Mozzarella cheese and pepperoni.
- Quickly stir moist ingredients into dry ingredients until just moistened.
- Spoon into oiled muffin cups.
- Sprinkle tops with grated Parmesan cheese.
- Bake at 350u0b0 for 20 minutes or until done.
- Serve hot from oven or reheat.
