Mediterranean Marinated Vegetables

  1. Layer vegetables in a deep, straight sided salad bowl.
  2. Pour on dressing; cover.
  3. Marinate overnight in refrigerator.
  4. Toss before serving.
  5. Garnish with parsley if desired.
