Italian Meatloaf
- 500 grams mince meat
- 1 chorizo or bacon
- 1 large onion
- 2 clove garlic
- 150 grams bread crumbs
- 2 large eggs
- 150 ml passata
- 150 ml single cream
- 50 grams chedder cheese
- 25 grams blue cheese
- 125 grams sliced bread
- 1 medium egg yolk
- Preheat oven gas mark 4
- Cut tin foil and place on a baking tray with a dash of oil
- Put mince and chorizo or bacon in a bowl with chopped onion and crushed garlic.
- Add passatta, 150g bread crumbs and two large eggs
- Knead meat mixture and spread out evenly on foil
- To make cheese sauce; in a pan bring cream to the boil
- Add cheese, egg yolk and bread slices.
- Mix until a pastry texture
- Spread cheese sauce onto meat evenly
- gently pull foil from under meat so that it rolls like a Swiss roll, discard foil
- cook in oven 45 mins
