Individual Cobb Salads

  1. Toss together romaine, tomato, avocado, soy bacon, and blue cheese in large bowl.
  2. Scoop 1/2 cup salad into each of 8 ramekins, small bowls, or old-fashioned cocktail glasses, and top each salad with 1 wedge hard-boiled egg and 1 wedge lemon.
  3. Serve olive oil on the table so guests can drizzle their own.
