Aztec Style Beef Casserole

  1. Preheat oven to 400 degrees F. Mix barbecue sauce and pepper in small bowl; set aside.
  2. Brown meat with onions and garlic in large skillet on medium-high heat 8 to 10 min., stirring occasionally.
  3. Drain.
  4. Add corn and barbecue sauce mixture; mix well.
  5. Reserve 5 zucchini slices; set aside.
  6. Arrange half of the remaining zucchini in single layer on bottom and side of 2-qt.
  7. casserole dish.
  8. Layer with half of the meat mixture, 1 cup of the cheese, remaining zucchini and remaining meat mixture.
  9. Top with reserved 5 zucchini slices and remaining cheese.
  10. Cover with foil.
  11. Bake 20 min.
  12. Remove foil.
  13. Bake an additional 5 min.
  14. until casserole is heated through and cheese is melted.
