Pizza Chicken
- 1 envelope Shake 'n Bake (barbecue style)
- 1 tsp. oregano
- 2 1/2 lb. cut up chicken
- 3/4 c. shredded Mozzarella cheese
- 2 large, firm, sweet red peppers
- 2 large, firm, sweet green peppers
- 1 (9-inch) pastry shell (purchased or homemade)
- 1 Tbsp. olive oil
- 1/2 c. diced red onion
- 1/4 c. pitted Calamata olives
- 2 Tbsp. chopped, fresh parsley
- 1 c. cubed Feta cheese
- Heat broiler.
- Place peppers in baking pan under broiler for about 20 minutes, turning every 5 minutes or so until peppers are evenly charred.
- Remove and let stand until cool enough to handle. Peppers will be easy to peel.
- Peel and discard skin.
- Remove and discard inner seeds and core.
- Thickly slice peppers and set aside.
