Jade Tree Chicken
- 4 boneless chicken breast halves, cubed
- 2 c. fresh broccoli florets
- 1 c. celery, chopped
- 1 large onion
- 1 green bell pepper
- 1 (4 oz.) can button mushrooms
- soy sauce
- cooking oil
- cornstarch
- 1/4 c. water
- 3 Tbsp. lemon juice
- 1/2 tsp. garlic powder
- 1/2 tsp. sugar
- 1/4 tsp. ground red pepper
- Mix 3 tablespoons of soy sauce, 1 tablespoon of oil, 1 teaspoon cornstarch, garlic powder, sugar and red pepper.
- Add chicken and marinate 30 minutes in refrigerator.
- In wok or electric frying pan, heat 2 tablespoons of oil on medium heat.
- Cook all vegetables until tender-crisp and remove from pan.
- Add chicken and marinade to same pan and cook until chicken is opaque.
- Return vegetables to pan.
- Mix 3 tablespoons of soy sauce, 1 teaspoon cornstarch, lemon juice and water.
- Pour over vegetables and chicken and simmer until sauce thickens.
- Serve over rice or pasta.
