Whole Wheat Vegan Cheese Scones
- 1 cup whole wheat flour
- 1 12 cups oats
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 tablespoons Splenda granular
- 13 cup nonfat soymilk
- 13 cup water
- 2 teaspoons vinegar
- 3 tablespoons margarine (I use Earth Balance)
- 12 cup low-fat cheddar cheese (use vegan version, like Vegan Gourmet)
- Heat oven to 375F.
- Line baking pan with parchment paper.
- Combine dry ingredients in food processor and pulse.
- Combine milk, water, and vinegar and set aside.
- Add "butter" and "cheese" to food processor and pulse until mix is crumbly.
- Empty into large bowl, add wet mixture and stir just until combined.
- Bake for 20-30 minutes or until done.
