Classic Japanese Okara Dish
- 150 grams Fresh okara
- 3 Dried shiitake mushrooms
- 1/3 Carrot
- 1/2 Green onion (with the green parts)
- 300 ml Dashi soup stock (water used to hydrate the shiitake mushrooms)
- 1 1/2 tbsp Soy sauce
- 2 1/2 tbsp Sugar
- 1 pack Bonito flakes
- 1 tsp Dashi stock granules
- 1 Sesame oil
- Hydrate and thinly slice the shiitake mushrooms.
- Julienne the carrot into 3 cm long pieces.
- Slice the green onions diagonally.
- Pour some sesame oil into a pan.
- Stir-fry the carrots and the shiitake mushrooms.
- Add the okara and cook briefly.
- Pour in the dashi soup stock.
- Add the seasonings and the soup stock granules.
- Simmer until the water is completely reduced (about 15 minutes).
- To finish, add the green onions and the bonito flakes.
- Simmer briefly.
