Classic Japanese Okara Dish

  1. Hydrate and thinly slice the shiitake mushrooms.
  2. Julienne the carrot into 3 cm long pieces.
  3. Slice the green onions diagonally.
  4. Pour some sesame oil into a pan.
  5. Stir-fry the carrots and the shiitake mushrooms.
  6. Add the okara and cook briefly.
  7. Pour in the dashi soup stock.
  8. Add the seasonings and the soup stock granules.
  9. Simmer until the water is completely reduced (about 15 minutes).
  10. To finish, add the green onions and the bonito flakes.
  11. Simmer briefly.
