Caramel Popcorn
- 2 packages microwave popcorn, popped
- 1 cup brown sugar, packed
- 12 cup margarine
- 12 cup white corn syrup
- 12 teaspoon salt
- 12 teaspoon baking soda
- Pop popcorn in microwave.
- Place popped popcorn into a large brown paper bag.
- **Make sure you separate all unpopped kernels from popcorn before putting in bag.
- You don't want to bite down on unpopped kernels** Set aside the bag.
- In a deep glass bowl, combine brown sugar, margarine, corn syrup and salt.
- Microwave this mixture on high until it starts to bubble.
- Stir and continue to cook on high for 2 minutes.
- Add baking soda to brown sugar mixture and stir until it becomes frothy.
- Carefully pour syrup mixture over the popped popcorn in bag and shake to coat.
- (Mix is very hot).
- Fold down bag and microwave on high for 1-1/2 minutes.
- Remove bag, shake to coat.
- Fold down bag and microwave again on high for 1-1/2 minutes.
- Remove bag, shake to coat.
- Fold down bag and microwave one last time for 30 seconds.
- Shake to distribute caramel and break apart.
- I put this into an airtight container, but continue to break apart until cooled.
