Croquettes Full of Mushrooms and Sweet Potatoes
- 2 medium sized Sweet potato
- 1/2 bunch Shimeji mushrooms
- 1 Shiitake mushroom
- 1/2 bunch Maitake mushrooms
- 1/2 Onion
- 1 tbsp Sake
- 2 tbsp Soy sauce
- 1 tbsp Mirin
- 1 tsp Sugar
- 1 pinch Salt
- 1 dash Pepper
- 1 Cake flour
- 1 Egg
- 1 Panko
- Steam the sweet potato in a steamer with the skin still on.
- If you don't have a steamer, use a pot with a small amount of water, cover with a lid and steam.
- Finely dice the mushrooms and onion.
- Coat a pan with vegetable oil and heat the combined mixture of sake, soy sauce, mirin and sugar until it's an even consistency.
- Peel the potatoes, mash with a fork and mix with ingredients from Step 2.
- Season with salt and pepper.
- Round into an oval shape, coat in flour, beaten egg, panko in that order.
- Deep fry until crisp in 355F/180C oil and it's done!
