Chicken Spinach Roll
- 8 Thin chicken cutlets
- 1/2 cup Italian seasoned bread crumbs
- 1/4 cup Parmesan cheese
- 5 eggs
- 5 oz Frozen spinach cooked and squeeze dry
- 6 tbsp Ricotta cheese
- 6 oz Mozzarella cheese cut into thin slices
- 1 cup Marinara sauce
- 1 Olive oil nonstick spray
- 1 Salt and pepper to taste
- Preheat oven to 450 and spray baking dish with nonstick spray
- Combine bread crumbs and 2 tablespoons of parmesan cheese in one bowl and in another bowl 4 eggs beaten.
- And In bowl number 3 combine the rest of parmesan cheese, spinach, ricotta cheese and 1 egg beaten
- Lay the chicken down salt and pepper and spread about 1 to 2 tablespoons of the spinach mixture on each cutlet.
- Loosely roll and keep the seam side down
- Dip chicken in egg mixture then in bread crumbs then place in baking dish seam side down.
- Bake for 25 minutes remove from oven and top with marinara sauce and mozzarella cheese place back into oven and bake until cheese is melted.
- Serve with additional sauce on the bottom and enjoy!!!
