Whole Wheat Zucchini Bread
- 1 c. sifted all-purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 tsp. ground allspice
- 1 c. whole wheat flour
- 2 eggs
- 2/3 c. vegetable oil
- 1/4 c. honey
- 1/2 tsp. lemon extract
- 1 1/2 c. shredded zucchini
- 1/2 c. chopped nuts
- 1/4 c. raisins
- 1 tsp. sesame seed (optional)
- Sift all-purpose flour, baking powder, baking soda, salt, cinnamon and allspice.
- Stir in whole wheat flour.
- Beat eggs, oil, honey and lemon extract with rotary beater until smooth and frothy.
- Stir in zucchini.
- Add flour mixture; stir well, but do not beat.
- Stir in nuts and raisins.
- Turn into a greased 9 x 5 x 3-inch loaf pan.
- Sprinkle with sesame seed.
- Bake in a 325u0b0 oven for 1 hour, or until toothpick inserted in center comes out clean. Makes 1 loaf.
