Baked Acorn Squash Stuffed With Nuts And Apples Recipe
- 1 med acorn squash
- 1 lrg apple peeled, minced
- 1 tsp honey - (to 2)
- 1 tsp lemon juice
- 1 Tbsp. minced walnuts - (to 2)
- 1/4 tsp grnd cinnamon
- Preheat the oven to 350 degrees.
- Cut the acorn squash in half and remove the seeds.
- Bake the squash upside down for 30 min.
- Meanwhile, combine the apple, honey, lemon juice, nuts, and cinnamon.
- Fill the squash halves with this mix and bake for another 30 min, or possibly till the squash is soft.
- Serve warm.
- This recipe yields 2 servings.
- Comments: Look for acorn squash with dark green skins which have "the kiss of the sun" - a large spot of orange.
- Although not a guarantee, it is usually an indication which the flesh will be deep orange and sweet.
