Layered Beef & Zucchini

  1. Heat oven to 350F.
  2. Grease 8x8x2 baking dish.
  3. Brown & drain ground beef.
  4. Place zucchini slices in single layer on bottom of dish.
  5. Sprinkle with 1/4 cup gluten-free buscuit mix.
  6. Top with beef & spaghetti sauce.
  7. Mix cottage cheese & egg.
  8. Then add 1/2 cup gluten-free biscuit mix until soft dough forms.
  9. Spread over sauce.
  10. Sprinkle with Parmesan cheese.
  11. Bake uncovered until hot & bubbly, about 30-32 minutes.
  12. Let stand 10 minutes before serving.
