Creamy Potato & Chive Bake
- 1 kg Washed potatoes, thinly sliced
- 3 Rashers bacon, chopped
- 1/2 large Green capsicum (pepper), diced
- 300 ml Sour cream
- 1/3 cup Chives, chopped
- 1/3 cup Flat leaf parsley, chopped
- 1 cup Grated cheese
- 1/2 cup Grated Parmesan cheese
- 1 Sea salt & cracked black pepper
- 1 Sprinkle of smoked paprika
- Pre heat oven to 180*C.
- Now- prep your veggies separately.
- Slice potatoes, dice bacon & pepper, grate cheeses, chop herbs.
- Layer ingredients into a baking/ casserole dish.
- Potatoes, bacon, peppers, herbs, cheese and then drizzle a little cream.
- Repeat process until you are happy with size of the dish, finishing with a layer of potato.
- Cover and bake for 30 minutes.
- Remove from oven, uncover and top with extra cheese, paprika and salt & pepper.
- Return to the oven and bake until potato is soft and creamy and topping is golden brown.
- Great side dish with a juicy fat beef steak- nice piece of pork.. Whatever tickles your taste buds!
