Stuffed squid
- 4 squid tubes (3-5 inches long)
- 3 tbsp dark soy sauce
- 2 tbsp chilli vinegar or distilled vinegar
- 100 grams shrimps (deveined)
- 1 handful of sweet corn
- 4 garlic cloves
- 1/3 bell pepper
- 1/3 carrot
- 1 large scallions
- 3 fresh green chilli
- 1/2 tomato
- 1/3 tsp black pepper
- 1/3 tsp coriander powder
- 4 bamboo skewers or tooth pick
- ~For marinating the squid: - In a bowl mix the ingredients and marinate for an hour or two.
- ~For stuffing: Finely chop all the veggies, deveined the shrimp and season with a" tbs coriander powder, a"tbs black pepper, a pinch of salt.
- Keep aside.
- ~For preparing the stuffing: -heat little oil in pan, saute the crushed garlic for few seconds, add shrimp to it saute a couple of minutes and add sweet corn.
- Add the rest of the vegetables and saute for 5-7 minutes.
- ~For Stuffing: -fill each squid tube with the stuffing and secure it with a tooth pick or a bamboo skewer.
- -heat generous amount of oil in pan and pan fry the stuffed squid tubes or deep fry until light golden brown.
- (Do not overcook) takes about 5-10minutes
- Garnish with parsley or spring onions.
- Dip with your favorite sauce.
