Aunt Nora's Mock Lobster
- 2 pounds mixed ground beef, veal and pork
- 2 eggs, lightly beaten
- 2 cups bread crumbs
- 1 cup chopped onion
- 1/2 cup chopped green pepper
- 1/4 cup milk
- 1/4 cup horseradish
- 1 teaspoon dry mustard
- 2 teaspoons salt
- 18 teaspoon freshly ground pepper
- 1/4 cup ketchup; more for garnish
- 8 strips bacon
- Preheat the oven to 350 degrees.
- In a bowl, combine everything but the bacon.
- Mix, using your hands, until well blended.
- In a roasting pan or iron skillet, shape the mixture into a lobster.
- With the ketchup, either rub a thin coating all over the lobster or make lines for visual appeal.
- Wrap the bacon slices across the tail or at joints, so everyone gets a little.
- Bake for 50 to 60 minutes, covering the "claws" with foil after 40 minutes so that they don't dry out.
