Mrs. Pierce'S Fruit Cake
- 1 lb. butter (2 c.) softened
- 10 eggs
- 1 lb. sugar (2 c.)
- 1 lb. flour (4 c.) (all-purpose)
- 1 tsp. salt
- 1 lb. raisins, cooked and cooled
- 1/2 c. brandy
- 1 glass jelly (8 oz.)
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 1 tsp. cloves
- 1/2 tsp. cream of tartar
- 1/2 tsp. baking soda
- 1 tsp. baking powder
- 1 pt. walnut meats, chopped
- 1 lb. each: pineapple peel, orange peel, lemon peel and dates
- Grease and line tube pans and mix ingredients all together. Bake in oven at 275u0b0 for 2 1/2 to 3 hours.
- Decorate top with cherries cut in half and pecans about 1 hour before done.
- Use wooden toothpick to test doneness.
- Makes 2 tube pans and 1 loaf pan.
