BBQ Chicken Quinoa on a bed of pak choy

  1. Pre heat oven to 180 then make the sauce & set aside.
  2. Coat chicken in BBQ sauce, i used 32g put in tin foil cover and pop in oven for 30 minutes.
  3. Take top layer of foil of or open and cook 10 minutes keeping eye on it so not to burn it.
  4. Mine looks burnt but isn't it was crispy.
  5. Put quinoa in dry pan and let it slightly brown for 5 minutes on low- medium heat.
  6. I didn't rinse my quinoa.
  7. Add water bring to boil stirring then pop lid on turn heat down & simmer for up to 20 minutes until most of the water has absorbed.
  8. Remove from heat draining any excess water if any & let stand for 10 minutes.
  9. Put washed pak choy on tin foil in layers and steam for about 5 minutes until cooked.
  10. Don't over cook as will go mushy.
  11. Put pak choy on a plate, fluff quinoa with a fork the place over pak choy.
  12. Put chicken on top & add more BBQ sauce.
  13. enjoy.
  14. I got mine down to 466 calories.
  15. You can put rest of BBQ in bottle in fridge should last a while.
