BBQ Chicken Quinoa on a bed of pak choy
- 64 grams BBQ Sauce click link in step 1
- 1 chicken thigh I left skin on.
- 60 grams Quinoa
- 170 ml hot water
- 90 grams Pak Choy
- Pre heat oven to 180 then make the sauce & set aside.
- Coat chicken in BBQ sauce, i used 32g put in tin foil cover and pop in oven for 30 minutes.
- Take top layer of foil of or open and cook 10 minutes keeping eye on it so not to burn it.
- Mine looks burnt but isn't it was crispy.
- Put quinoa in dry pan and let it slightly brown for 5 minutes on low- medium heat.
- I didn't rinse my quinoa.
- Add water bring to boil stirring then pop lid on turn heat down & simmer for up to 20 minutes until most of the water has absorbed.
- Remove from heat draining any excess water if any & let stand for 10 minutes.
- Put washed pak choy on tin foil in layers and steam for about 5 minutes until cooked.
- Don't over cook as will go mushy.
- Put pak choy on a plate, fluff quinoa with a fork the place over pak choy.
- Put chicken on top & add more BBQ sauce.
- enjoy.
- I got mine down to 466 calories.
- You can put rest of BBQ in bottle in fridge should last a while.
