Fried Yellow Corn
- 6 ears sweet yellow corn
- 3 to 4 slices salt pork bacon
- 1 Tbsp. self-rising flour
- 1 stick butter or margarine
- salt to taste
- sugar to taste
- Shuck and clean silks from corn.
- Wash and drain.
- Use sharp knife to cut and scrape corn from cobs into a wide open pan or bowl.
- Add 1 tablespoon of flour and about 1/2 to 1 cup of water. Blend well.
- Slowly cook salt pork in cast-iron skillet to extract the grease.
- Once grease is extracted, you can drain salt pork on a paper towel and nibble on it as you cook.
- Remove grease from heat and slowly stir corn mixture into grease.
- Return skillet to heat and cook over medium heat.
- Add the stick of margarine, salt and sugar to taste and let simmer, stirring slowly, until corn is thick and the grease rises to the top (approximately 30 minutes).
