Fried Yellow Corn

  1. Shuck and clean silks from corn.
  2. Wash and drain.
  3. Use sharp knife to cut and scrape corn from cobs into a wide open pan or bowl.
  4. Add 1 tablespoon of flour and about 1/2 to 1 cup of water. Blend well.
  5. Slowly cook salt pork in cast-iron skillet to extract the grease.
  6. Once grease is extracted, you can drain salt pork on a paper towel and nibble on it as you cook.
  7. Remove grease from heat and slowly stir corn mixture into grease.
  8. Return skillet to heat and cook over medium heat.
  9. Add the stick of margarine, salt and sugar to taste and let simmer, stirring slowly, until corn is thick and the grease rises to the top (approximately 30 minutes).
